Sesame Green Beans To Go

Looking for a tasty and quick vegetable dish? This one can be made in advance and packaged to go for a great lunch item or snack. You can use either fresh or frozen green beans or vary the recipe by using broccoli or asparagus…
Vegetables don’t have to be boring… Try this simple vegetable tonight for dinner or make it in advance and portion it into containers of individual servings to have ready for lunch or a snack.
1 1/2 pounds green beans, washed and trimmed
1 teaspoon dark sesame oil
A few drops of hot chili oil (optional)
1 teaspoon of rice vinegar
2-3 tablespoons toasted sesame seeds (a handful)
Coarse salt (optional)
Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and then plunge into cold water with a few ice cubes. Drain well and place in a storage container. Add other ingredients and toss to coat the vegetable evenly.
