Cheesey Waldorf Salad

You can put these in small containers to be eaten with a fork or you can pack a couple of Boston lettuce leaves in a plastic bag and divide the salad portion onto the 2 leaves to make a lettuce wrap at school or work…


  • 1 large Granny Smith apple, unpeeled and chopped coarsely
  • 1 Tbsp lemon juice
  • 1 large celery stalk, chopped coarsely
  • 2 Tbsp coarsely chopped walnuts or pecans
  • 2 Tbsp craisins or 20 red grapes cut in half
  • 2 ounces low fat cheddar cheese
  • 2 Tbsp fat free plain greek yogurt
  • 1 Tbsp low fat mayo type salad dressing
  • Sprinkle the apple chunks with lemon juice and toss (to prevent browning)
  • Add the celery, nuts, fruit and cheese and toss together
  • Mix the yogurt and mayo together (you can add a sprinkle of cinnamon or apple pie spice or a chopped green herb such as parsley if you like)
  • Add the dressing and toss
