Gypsy Stew (adapted from Lickety Split Meals)

2-15 oz cans garbanzo or navy beans, rinsed and drained
1 box frozen and defrosted chopped spinach
1/4 to 1/2 pound pork tenderloin or chicken breast, 1/2" cubes
2-15 oz cans low salt, low fat chicken broth
1 cup water
1 -15 oz can unsalted canned tomatoes
1 large sweet potato, cut into wedges
1 medium onion, cut into wedges
1 red pepper, cut into wedges
2 tsp paprika (sweet or hot)
2 tsp cumin
1/4 tsp cinnamon
1 tsp dried basil
1/2 tsp salt
1/4 tsp fresh ground black pepper
1/4 tsp ground cayenne pepper
Place all ingredients in slow-cooker
Cover and cook on low for 10-11 hours or on high for 5-6 hours.
Serve with a broccoli or other green salad.
